Our cuisine follows the “from nose to tail” philosophy, making full use of each part of the animal to reduce waste and honor the raw ingredients.
We use fresh, local, and seasonal products, carefully sourced from small producers and alpine pastures in the region. Our cheeses come from the Olivone dairy, meats from ethical Swiss farms, and fruits and vegetables are selected according to seasonality, prioritizing zero-kilometre sourcing.
Our menu is dynamic and shaped by the availability of ingredients, offering authentic and flavorful dishes that are always fresh. Every plate tells a story of heritage, nature, and sustainability.
From April to October, we also offer a Daily Menu during the week – tasty and affordable, ideal for a refreshing lunch in the heart of nature.
